New recipe here for y’all: This is one of my absolute favorite salads! It takes just seconds to throw together and makes a great side dish for any meal. By adding some grilled chicken and serving with baguette toasts, it can be quickly made into a small meal or main dish as well. My mom always made this yummy and fresh salad for our family on special occasions to go with savory grilled chicken wings. I’ve got some happy memories with this recipe! It has become one of my staples. Thanks mom 🙂

I like to pre-chop my veg and keep a bunch on hand in the freezer. Cabbage stays pretty crunchy even after being thawed, which is wonderful. When I have homemade coleslaw mix on hand, it takes no time at all to put this salad together last-minute. All it takes is putting everything in a bowl, measuring out the dressing, and mixing it all up!

The only tools you will need for this recipe are some tongs, a large bowl, and a jar with a tight-fitting lid or a small bowl and a whisk. It’s that simple!

Let’s get right into it:

Prep time: ~5 min

Serves 5-6 peeps

Ingredients:

1 Packet of Chicken Flavor Ramen Noodles

~

2 Cups Shredded Green Cabbage

1 Cup Shredded Red Cabbage

1/2 Cup Shredded Carrots

OR 1 small bag of Pre-made Coleslaw mix

Asian Salad Dressing:

1/4 Cup Sesame Oil or Olive oil

3 Tbsp Seasoned Rice Vinegar

1 Tbsp Soy Sauce

1 Tbsp Ground Ginger

1 Tbsp Onion Powder

1 tsp Garlic Powder

1 tsp Black Pepper

1 tsp Sea Salt

Toppings:

Pepitas, Green Onions, diced red onions, goat cheese, fresh basil leaves, OR diced ripe tomatoes (Make it your own!)

Steps:

  1. If you didn’t buy a bag of pre-made coleslaw, thinly slice your veggies first. Make sure the veggies are cut into nice small pieces. Then, crunch up the ramen noodles and save the seasoning packet for the dressing.
  2. Add the green and red cabbage, carrots, and crushed ramen noodles to a large bowl.
  3. Grab all of the ingredients for the dressing and measure them out into a jar with a tight-fitting lid. Add the packet of ramen seasoning. Shake up the dressing really well, and then give it a taste. Add salt as needed.
  4. Pour dressing over veggie mixture and use the tongs to toss and combine.
  5. Serve with one of the topping options listed above, or choose your own! Enjoy this healthy appetizer.
