How do I make Spam Musubi?

  1. Cook your rice, let it cool to room temperature, and add rice vinegar.
  2. Fry spam in brown sugar and rice vinegar.
  3. Form rice balls and place spam on top.

This quick and delicious recipe surprised me when I tasted how yummy it was! I wanted to try something new after watching lots of videos of Korean cooking, as well as eating Spam musubi at Hawaiian Bros for the first time. I adapted the recipe to have some sweetness to cut the saltiness of the spam, which was something I noticed when tasting HB’s version of this. My dad always says that Spam is a “Once a year thing” for him, but I could see myself having this for a few lunches this year. 😊


Since I only sliced off a few thin pieces of spam for a lunch for my boyfriend and I, I went ahead and froze the rest of the Spam for next time. I also only used a half a cup of rice which turned out to be the perfect amount. The nori (seaweed) belts are optional, but inexpensive and mostly tasteless. I just think they are adorable.

Anyways, here is the recipe, I hope you enjoy!

Yield: 3-4 portions (I ate two for a satisfying lunch)

Ingredients:

Half a can of Spam, sliced thinly (0.25 inch thick or so)
Two tablespoons brown sugar
S&P to taste
1 sheet of Nori
A few dashes of seasoned rice vinegar
Half cup of Rice
One cup water


(Sticky rice is best, but if all you have is Jasmine Rice, you can totally add a tsp of cornstarch to your rice after it is cooled off, this should facilitate the shaping process.)

Directions:

  1. Rinse your rice with cold water till it runs clear. Add it to a small pot with one cup water and put it on the stove on high. Add S&P and give it a stir. Once it is at a boil, cover with a tight-fitting lid and turn the burner down to low. Set timer for 18 min. Once timer is up, turn off burner and take rice off heat. Do not remove the lid yet, let the rice cool for about five min first.
  2. In a small skillet, place your thinly sliced Spam over medium heat. Let them get slightly golden brown on both sides, and then add pepper, brown sugar, and a dash of seasoned rice vinegar to the pan to coat them. Do not add any salt to the Spam, hahaha… Once the brown sugar melts and coats the slices in a delicious shiny layer, remove from heat and let cool enough to be able to touch them.
  3. If you used regular rice, this is where you would add your 1tsp cornstarch to your cooled rice. Also go ahead and add a dash of seasoned rice vinegar. Next, form patties of rice in the shape of the spam, a kind of rounded off rectangle. I made three big patties of rice, but if you have four slices of spam you can make smaller patties. Smash the rice into shape with your hands. This part was pretty fun, like playing with Play-Doh 😊. After forming these shapes, place the spam over them. Next, cut thin, long strips of Nori, and wrap each Musubi with the strips to complete this yummy lunch!
