Who doesn’t love cheesecake? Especially paired with all the delicious berries that are currently in season. I find that there are mulberries and strawberries everywhere in my backyard right now, and I almost don’t know what to do with it all! Here is an easy no bake dessert recipe that is the perfect quick and yummy treat! Store them in your refrigerator for when you get a sweet tooth. All you need to make no bake cheesecake bites is a block of cream cheese, half a stick of butter, powdered sugar, and your chosen toppings/fillings. Simply blend together and let set in the refrigerator, then fill with berries and coat with graham cracker crumbs. Delicious!

Ingredients:
1 16oz block softened cream cheese
1/2 stick of salted butter, room temperature
1 C powdered sugar
1 tsp vanilla extract
Smashed Graham Crackers – for the graham cracker crust. Feel free to use a food processor to crush them or just do it by hand.
1/4 C Brown Sugar
Strawberries, washed and hulled.
Steps:
1. Combine cream cheese and butter in a large bowl using a hand mixer on medium-high speed or a whisk
2. Add powdered sugar and blend until creamy
3. Place cream cheese mixture in an airtight container and place in the refrigerator
4. Let mixture set for an hour
5. Using a small cookie scoop, gather some of the cheesecake mixture and press the strawberry into it. Then, form round balls around each of the strawberries.
6. Mix together the crushed graham crackers and brown sugar in a small bowl
7. Roll the bites in crushed graham cracker mixture, place on a baking sheet lined with wax paper or parchment paper and let them set in the refrigerator for another hour.
8. Enjoy!

Strawberry No-Bake Cheesecake Bites
Ingredients

I love to create new recipes, garden and preserve food. Soon, my garden will be producing and I will be canning nonstop! I look forward to sharing that journey with you, as it will be my first time canning. I have done a lot of freezer meal prep as well as dehydrating foods, but not canning yet, so I am very excited. I have dreamt of having a homestead for years now, and having this garden and these opportunities makes it feel real. It’s already happening even though I don’t have that ‘dream property’ yet. The goal is to be more prepared by the time I do purchase a larger property in order to start a garden and have a couple pigs and some chickens that first year!
After that, I will start working towards total self sufficiency. (I’d even be happy with partial). My little house on the prairie dreams are slowly taking shape, each day something new adds to it. So far, our garden has nearly 30 different fruit or veggie plants growing in it. We are trying to use up the space wisely so that most of our yard is made up of edible plants. If we ever move, it is going to be interesting taking our perennials with us, haha. I plan on continuing to do what I love, which is cooking, doing creative projects, writing, caring for the house, and taking care of kiddos (as a nanny, no kiddos for me yet!).
